Moroccan Academy of Gastronomy

The Moroccan Academy of Gastronomy was founded in Tangier in 2022. The purpose of this foundation is to:

  • To protect and perpetuate the Moroccan culinary arts and everything related to them,
  • Make an inventory of the list of dishes at the regional and national level,
  • Create a dictionary and a guide to national and regional recipes and dishes,
  • Promoting Moroccan culinary heritage,
  • Encourage the acquisition of this culinary culture through training and internships for the benefit of young talents,
  • Encourage initiatives to create niche restaurants serving Moroccan cuisine,
  • To support Moroccan artisans and young chefs in their creativity,
  • To provide chefs and researchers in the Moroccan culinary heritage with the necessary means to better perpetuate these culinary arts and promote them,
  • To combat poor workmanship and practices seeking to distort this heritage and to help kitchen artists and chefs so that they can live with dignity and sustainability in their work,
  • Participate in the gradual establishment of a culinary arts space at the national and local levels,
  • To offer professionals, chefs, researchers and artists, a space to exchange in order to better promote this gastronomy,
  • Encourage constructive exchanges and consultations between professionals, chefs, academics and researchers from Morocco and abroad on topics and issues relating to the national culinary heritage,
  • Finally, the Moroccan Academy of Gastronomy Foundation is independent and apolitical.
